Description

1 box 12 oz Jumbo Pasta Shells
16 oz Fresh Organic Baby Spinach
15 oz Whole Milk Ricotta
1.5 cups Shredded Mozzarella
1/2 cup Grated Parmesa
3 cloves Minced Garlic
1 tsp Dried Oregano
1/4 tsp Freshly Grated Nutmeg
24 oz Marinara Sauce
2 tbsp Extra Virgin Olive Oil
1 tsp Honey or Monk Fruit (optional)


Instructions

  1. Prep the Pasta: Bring a large pot of salted water to a boil. Cook the jumbo shells according to package directions, but remove them 2 minutes before the 'al dente' mark. Drain and rinse with cool water to stop the cooking process
  2. Sauté the Spinach: In a large skillet, heat 1 tablespoon of Extra Virgin Olive Oil over medium heat. Add the fresh spinach and cook until wilted. Squeeze out excess moisture
  3. Create the Filling: In a large mixing bowl, combine the ricotta, squeezed spinach, half of the mozzarella, all the parmesan, minced garlic, oregano, and nutmeg. Mix until well incorporated
  4. Assemble the Dish: Spread about 1 cup of marinara sauce across the bottom of a 9×13 inch baking dish. Using a spoon or piping bag, fill each cooked shell with the spinach and cheese mixture
  5. Top and Bake: Pour the remaining marinara over the stuffed shells and sprinkle with the remaining mozzarella. Cover with foil
  6. Final Bake: Bake at 375°F (190°C) for 20 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and slightly golden. Let it rest for 5 minutes before serving

Notes

Ensure you squeeze out all moisture from the spinach to prevent a watery filling.

Using freshly grated cheese will provide better melting and flavor.
