Ingredients

1 large Red Onion, sliced
3 cloves Garlic, minced
1 medium Sweet Potato, cubed small
2 medium Zucchini, sliced into half-moons
1 large Red Bell Pepper, chopped
1 large Yellow Bell Pepper, chopped
2 cups Fresh Spinach, packed
1 teaspoon Smoked Paprika

1/4 cup Fresh Parsley, chopped
Instructions
